A light water kimchi made with crisp pear, minari, chilies, and a potato-based brine flavored with garlic and ginger.

Boil the potato, then blend it with water to make a potato slurry.
Cut the pear into thin, flat rectangular slices.
Slice the green and red chilies diagonally.
Cut the minari into pieces about the same size as the chilies.
Combine the prepared ingredients with the potato starch liquid, sugar, garlic, and ginger to make the water kimchi.
Let it ferment for about one day before serving.
