    Briefly blanch the chwinamul in boiling water.

    Rinse the blanched chwinamul in cold water.

  3. 3

    Gently squeeze out the excess water and cut the chwinamul into 5cm lengths.

    Mix all the remaining ingredients to make the seasoning.

    Place the chwinamul in a bowl, add the seasoning, and gently toss by hand until evenly coated.

    Transfer the seasoned greens to a serving dish to finish.

Ingredient substitutions

Soy sauce
Tamari works, though saltiness differs.
Salt
Soy sauce can add saltiness but also changes color and flavor.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Garlic
Garlic powder works in a pinch but lacks fresh aroma.
Perilla seed powder
Ground sesame can add nuttiness, but the aroma and thickness will differ.
