Fresh green garlic and dried squid are coated in a lightly thickened spicy seafood seasoning and served fresh or lightly fermented.

    Wash the green garlic thoroughly and cut it into 5 cm lengths.

    Soak the green garlic in water for about 30 minutes to reduce its pungency.

    Cut the dried squid into pieces measuring 1 cm by 5 cm.

    Mix the flour and water and cook over low heat to make a paste, then cool completely.

    Add all the remaining seasoning ingredients to the paste and mix well.

    Add the seasoning mixture to the green garlic and squid and toss well. Serve immediately or allow it to ferment slightly before eating.

Ingredient substitutions

Garlic
Garlic powder works in a pinch but lacks fresh aroma.
Water
Broth adds more flavor where appropriate.
All-purpose flour
A gluten-free flour blend may work, with a different texture.
Salt
Soy sauce can add saltiness but also changes color and flavor.
Gochugaru
Aleppo pepper is a gentler substitute; crushed red pepper works but is usually sharper and hotter.
