    Place the cucumber in boiling salted water and weigh it down with a stone.

    When the cucumber turns yellow, slice it and remove all excess moisture.

    Finely chop the green onion and garlic.

    Add the onion, red pepper flakes, and plum extract to a blender and blend until smooth.

    Add sesame seeds, the chopped green onion and garlic, and sesame oil to the mixture from step 4 and mix to make the seasoning.

    Add the seasoning to the cucumber and toss thoroughly.

Ingredient substitutions

Cucumber
Persian cucumber is a good substitute.
Gochugaru
Aleppo pepper is a gentler substitute; crushed red pepper works but is usually sharper and hotter.
Korean plum syrup
Use a little honey and rice vinegar, but sweetness and acidity will need adjustment.
Onion
Shallot or leek works with a different aroma.
Green onion
Chives or a small amount of leek can work, with a different flavor.
