Whole bellflower root flattened, grilled, and glazed with a savory-spicy pear and gochujang sauce, then finished with chives and sesame seeds.

Wash the whole bellflower roots and peel them.
Soak the bellflower roots in salted water to draw out the bitterness, then drain well.
Split each bellflower root in half and pound it with a mallet until thin and broad.
Make the seasoning sauce with grated pear, minced garlic, gochujang, soy sauce, and sesame oil.
Grill the bellflower roots in a pan until they begin to cook, then brush with the seasoning sauce and grill again over low heat.
Finish by sprinkling with chives and sesame seeds.
