    Slit the cucumber chili peppers lengthwise, remove the seeds, wash them, and soak them in the pickling liquid.

    Finely chop the chives and lotus root, and julienne the radish.

    Add a small amount of the pickling liquid to the prepared chives, lotus root, and radish and let them pickle.

    Mix the red pepper powder, ginger syrup, and sesame seeds into the pickled vegetables to make the filling.

    Stuff the cucumber chili peppers with the filling.

    Place the stuffed peppers in a container and pour in the remaining liquid to finish.

Ingredient substitutions

Cucumber
Persian cucumber is a good substitute.
Garlic chives
Scallions or a little leek provide freshness with a different aroma.
Korean radish
Daikon is the closest common option; it may be milder or more watery.
Soy sauce
Tamari works, though saltiness differs.
Gochugaru
Aleppo pepper is a gentler substitute; crushed red pepper works but is usually sharper and hotter.
