Butterbur stems are blanched, seasoned with perilla seed powder, simmered until tender, then chilled for a pleasantly nutty and slightly bitter vegetable side dish.

Cut the butterbur stems, blanch them, and peel off the outer skin.
Soak the blanched butterbur stems in cold water for 1 to 2 hours to reduce their bitterness.
Add the seasonings and mix them with the butterbur stems.
Heat the perilla oil in a pan and stir-fry the seasoned butterbur stems.
Add half a cup of water and simmer thoroughly until only a small amount of broth remains.
Let the cooked butterbur cool, then refrigerate until chilled before serving.
