Tender eggplant stir-fried over high heat with perilla oil and lightly coated in a sweet-spicy gochujang and ginger sauce.

    Wash the eggplant thoroughly and cut it into 1 x 1 x 4 cm pieces.

    Finely mince the ginger.

    Mix the ginger with the gochujang, corn syrup, and sesame seeds to make the seasoning sauce.

    Heat the perilla oil in a pan and stir-fry the eggplant over high heat.

    Once the eggplant is cooked, add the seasoning sauce and stir-fry only until evenly coated.

    Transfer to a plate.

Ingredient substitutions

Ginger
Ground ginger works in a pinch but is sharper and less fresh.
Gochujang
Combine miso, gochugaru, and a little sweetener for a functional substitute. It will not reproduce the same fermented flavor.
Rice syrup
Honey or corn syrup can add sweetness, but flavor and thickness change.
Sesame seeds
Omit if necessary; the dish loses some aroma.
