Jujube Porridge대추죽

A smooth millet porridge enriched with strained jujubes and chestnuts, then gently thickened with glutinous rice.

    Rinse the millet and soak it in water.

    Place the jujubes and peeled chestnuts in a pot, add 4 cups of water, and boil until the jujubes are soft.

    Mash the cooked jujubes by hand to release the flesh, then strain them together with the chestnuts through a sieve.

    Add five times the amount of water to the millet and cook, stirring continuously.

  5. 5

    Add the strained jujube and chestnut mixture from step 3 to the cooked millet from step 4, mix well, then add the glutinous rice slurry and simmer until thickened.

    Season with salt to taste and serve in a prepared bowl.

Ingredient substitutions

Jujube
Dried dates provide sweetness but are softer and more caramel-like.
Rice flour
Wheat flour behaves differently and is not an exact substitute, especially in rice cakes and porridge.
Water
Broth adds more flavor where appropriate.
Salt
Soy sauce can add saltiness but also changes color and flavor.
