Chicken Gomtang닭곰탕

A clear, deeply flavored chicken soup with shredded chicken, radish, onion, chilies, and a broth simmered from chicken bones, kelp, garlic, and green onion.

    Wash the boneless chicken and chicken bones thoroughly, then add the water, garlic, green onion, and kelp and simmer to make the broth.

    When the chicken is cooked, remove it and shred it finely.

    Cut the radish into thin square slices, slice the green onion, red chili, and Cheongyang chili diagonally, and mince the onion and garlic.

    Once the broth is well flavored, strain it through a sieve.

    Stir-fry the garlic in a pot, add the chicken and stir-fry together, then add the broth and prepared vegetables and simmer thoroughly.

    Season with pepper to finish.

Ingredient substitutions

Green onion
Chives or a small amount of leek can work, with a different flavor.
Korean radish
Daikon is the closest common option; it may be milder or more watery.
Onion
Shallot or leek works with a different aroma.
Red chili pepper
Use a mild red pepper or a small amount of chili flakes; heat will vary.
Garlic
Garlic powder works in a pinch but lacks fresh aroma.
