Stir-Fried Kimchi and Cabbage김치양배추볶음

Rinsed kimchi is stir-fried with cabbage and onion in perilla oil, then seasoned with ground barley shrimp, garlic, and a touch of soy sauce.

    Rinse the seasoning from the napa cabbage kimchi to reduce its saltiness, then cut it into thin strips.

    Finely shred the cabbage and onion, and slice the green onion diagonally.

    Finely grind the barley shrimp and garlic.

    Heat the perilla oil in a pan and stir-fry the kimchi, then add the cabbage and onion and continue stir-frying.

    When the cabbage has softened, add the soy sauce and the mixture from step 3 to season.

    Sprinkle with black sesame seeds.

Ingredient substitutions

Kimchi
There is no exact substitute. Sauerkraut plus gochugaru can provide acidity and crunch, but the flavor will be different.
Cabbage
Napa cabbage cooks faster and releases more water.
Onion
Shallot or leek works with a different aroma.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Soy sauce
Tamari works, though saltiness differs.
