Chilled Eggplant Soup가지나물냉국

Steamed eggplant is seasoned with chilies, scallions, garlic, and soy sauce, then served in a chilled kelp broth sharpened with two kinds of vinegar.

    Halve the eggplant, cut it into four sections, steam it for 5 minutes, then let it cool slightly.

    Tear the cooled eggplant into strips about the thickness of a little finger.

    Mix the minced chilies, scallions, garlic, and soup soy sauce to make the seasoning.

    Add the seasoning to the steamed eggplant and gently massage it in.

    Season half a cup of chilled kelp broth with the vinegars and bamboo salt.

    Place the seasoned eggplant in a glass bowl, pour the broth from step 5 over it, add ice, and sprinkle with sesame seeds.

Ingredient substitutions

Green chili pepper
Use a fresh green pepper with a similar heat level.
Red chili pepper
Use a mild red pepper or a small amount of chili flakes; heat will vary.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Garlic
Garlic powder works in a pinch but lacks fresh aroma.
Kelp
Use a vegetable or anchovy broth when kelp is unavailable.
