    Gently swish the oysters in salted water to wash them, then coarsely chop them.

    Wash the garlic chives and finely slice them.

    Add the kelp broth to the scorched rice, soak for 2 minutes, then bring to a boil.

    When the scorched rice is almost fully softened and broken down, add the oysters and simmer briefly.

    Once the porridge has thickened and softened, add the garlic chives and cook briefly.

    Transfer to a bowl and top with crumbled roasted green laver.

Ingredient substitutions

Kelp
Use a vegetable or anchovy broth when kelp is unavailable.
Water
Broth adds more flavor where appropriate.
Garlic chives
Scallions or a little leek provide freshness with a different aroma.
Soy sauce
Tamari works, though saltiness differs.
Toasted sesame oil
Perilla oil is different but works in some Korean dishes.
