    Wash the lettuce thoroughly, drain well, and cut into bite-size pieces.

    Cut the chives into 3 cm lengths and thinly julienne the onion into 3 cm lengths.

    Thinly julienne the red chili into 3 cm lengths.

    Soak all the vegetables in cold water, then drain well and set aside.

    Combine the soy sauce, water, concentrated plum extract, chili powder, sesame seeds, and vinegar to make the dressing.

    Add the dressing to the lettuce and gently toss with chopsticks.

Ingredient substitutions

Soy sauce
Tamari works, though saltiness differs.
Water
Broth adds more flavor where appropriate.
Korean plum syrup
Use a little honey and rice vinegar, but sweetness and acidity will need adjustment.
Gochugaru
Aleppo pepper is a gentler substitute; crushed red pepper works but is usually sharper and hotter.
Sesame seeds
Omit if necessary; the dish loses some aroma.
