    Julienne the onion and green onion, and slice the cucumber into half-moons.

    Chop the water parsley and perilla leaves into small pieces.

    Drain the whelk and cut it into bite-size pieces.

    Soak the julienned green onion in ice water.

    Make the low-sodium chili-vinegar sauce.

    Toss everything together just before serving to finish.

Ingredient substitutions

Onion
Shallot or leek works with a different aroma.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Cucumber
Persian cucumber is a good substitute.
Gochugaru
Aleppo pepper is a gentler substitute; crushed red pepper works but is usually sharper and hotter.
Ginger
Ground ginger works in a pinch but is sharper and less fresh.
