    Julienne the carrot, shiitake mushrooms, and bracken into 5 cm strips. Peel the zucchini in a rotating motion and julienne it into 5 cm strips as well.

    Cut the snails into thirds, then stir-fry them with the ingredients from step 1 in perilla oil. Separate the eggs into yolks and whites, cook each into thin egg sheets, and julienne them.

    Grind the dried pollock to make fine pollock shreds. Place the rice in a bowl, arrange the prepared ingredients on top, and finish with baby greens, edible flowers, and the shredded dried pollock.

Ingredient substitutions

Rice
Medium-grain rice works well. Long-grain rice is usable but gives a drier, looser texture.
Carrot
Bell pepper adds color but a different flavor.
Zucchini
Yellow summer squash is close.
Egg
For binding, use a commercial egg replacer or a small starch slurry; the flavor and texture will change.
Mushroom
Any mild mushroom can work.
