    Add the broth ingredients to a pot, boil for 10 minutes, then remove them.

    Mince the garlic, julienne the onion, and cut the zucchini into thin half-moons.

    Cut the young napa cabbage into 5cm pieces, slice the green onion diagonally, and cut the tofu into 0.5cm-thick slices.

    Mix the doenjang with the shiitake mushroom powder, raw soybean powder, and 50g of the broth.

    Dissolve the doenjang mixture into the broth, then add the minced garlic, zucchini, onion, and young napa cabbage in that order while cooking.

    Once it boils, add the dried shrimp and green onion, then simmer briefly to finish.

Ingredient substitutions

Garlic
Garlic powder works in a pinch but lacks fresh aroma.
Onion
Shallot or leek works with a different aroma.
Zucchini
Yellow summer squash is close.
Napa cabbage
Bok choy or green cabbage can work in some cooked dishes, but texture and water content differ.
Green onion
Chives or a small amount of leek can work, with a different flavor.
