    Cut the baby napa cabbage into bite-size pieces.

    Cut the scallions into 3 cm lengths and the steamed potato into bite-size pieces.

    Wash the garlic, ginger, radish, and onion thoroughly and cut them into bite-size pieces.

  4. 4

    Place the steamed potato, chili powder, plum syrup, sand lance fish sauce, salted shrimp, radish, onion, ginger, and garlic in a blender and blend to make the dressing.

    Toss the prepared baby napa cabbage and scallions with 15 g of the dressing.

    Transfer to a plate and finish with a sprinkling of sesame seeds.

Ingredient substitutions

Napa cabbage
Bok choy or green cabbage can work in some cooked dishes, but texture and water content differ.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Sesame seeds
Omit if necessary; the dish loses some aroma.
Potato
Korean radish gives a lighter texture.
Gochugaru
Aleppo pepper is a gentler substitute; crushed red pepper works but is usually sharper and hotter.
